Actually Italian is a restaurant based in Italy that takes the food seriously — not in the precious, no-photographs way, but in the we-looked-this-up way. Every dish we serve has a reason to be on the plate. Every recipe has a region, a history, and usually an argument attached to it.

We started this site because the gap between Italian food as it is eaten in Italy and Italian food as it is understood abroad is enormous, specific, and genuinely interesting. Parmigiana is not chicken. Carbonara is not cream. Garlic bread is not a thing. These are not opinions — they are facts with postcodes.

So we write about it. Recipes, corrections, long reads about why the simplest dishes are the hardest ones. Eat well. Know what you are eating.

Region first, always.
Italian food does not exist as a single cuisine. It is twenty regional traditions that happen to share a language. Every recipe we publish tells you where it comes from — and why that matters.

No shortcuts, no apologies.
We do not simplify recipes to make them faster or more convenient. If a dish takes patience, we say so. If it requires an ingredient you cannot find at your local supermarket, we tell you why it is worth finding.

Correct the record.
A significant portion of what the world calls Italian food was invented outside Italy, for reasons that made sense at the time and make none now. We document this, calmly, with citations. It is not an attack. It is a service.
